Hot Pot (火鍋)

Hot pot or steamboat is also known as the chinese fondue. You can read more about Hot Pots on this world foodie guide blog.

A good Hot Pot has good stock. Since I did not have time to boil chicken or pork bones, I used whole garlic, sliced ginger, Chicken Base and water for my stock.

Black Cod tastes delicious in Hot Pot. The trick is to seal the flavor of the fish by pan frying the marinated fillet of fish before cooking in the Hot Pot. Carrots, golden mushrooms and bean threads can be used to accompany the fish.

tip: marinate fish with salt and 1 tbsp wine for 15 minutes. Coat the fish with thin layer of cornstarch before pan frying.

Another variation to this hotpot using the same type of stock, is whole shitake mushrooms, tofu and pre-made tempura.

  1. Wow… I’ve never seen fish cooked in Hot Pot before, I’ve only had it with meats. Looks delicious though, as do all your dishes, dear. 🙂

    Fish do taste good in Hot Pot. Just make sure the fish is fresh and not overcooked.

    Yes, my Hot Pot soup was “sweet”. However, it was mostly from the Chicken Base and not the Black Cod. 🙂 I had chosen to keep all the flavor within the fish instead of contributing some of it to the soup.

  9. This reminds me of the shabu-shabu I had in Subang Jaya, or was it sukiyaki?! ‘Shabu’ sounds like a trendy drug in M’sia though. Someone, please set me right!

    A couple of months ago, I tried for the first time the famous cheese fondue and promptly fell in love with it. However, it’s terribly fattening and I must lose 2kg soon. Summer is almost here and I’m plump as a goose fattened for Christmas.

    I am so glad to read your reply to my comment. I think we all do fall easily into this trap from time to time, but so long as we remind ourselves of what we have, I think the sheer gratitude will blow away any negativity.

    Which is why blogging (when used properly) can be such a blessing — it allows us to share our thoughts and feelings, and since we are in public, we are more careful with what we want to say. “Do I really mean this? Am I that unhappy? Or can I write something positive today?”

    And in time, we feel and we become what we say and write. 🙂

    P.S. I have been trying out more one-pot dishes to suit my busy schedule and so I can eat out less since it’s not very healthy and expensive too. Will try this recipe of yours soon! Thanks in advance for sharing it. 😀

    Honestly, I did not know the answer to your question. So, I had to look it up.

    Shabu-Shabu is more savory and less sweet than Sukiyaki. For more information, read about it in Wikipedia.

    The word “yaki” means “sautee” or “grill” in Japanese. The word is used because the beef in sukiyaki is sauteed in the hot skillet (before the liquid is added to the hot pot). Shabu -Shabu, came from this swishing action. It only need to be cooked for a few seconds, saying “Shabu Shabu.” – Setsuko Yoshizuka

    I have tried cheese and chocolate fondue once at a restaurant back in Texas. I did not enjoy the meal for two reasons: 1) burnt my finger while “fondue’ing” …so much for a romantic dinner 2) a simple dish that I thought I could prepare at home.

I gave my Little Dragon (who is on the plump side) a magnet.     My girls were playing while I was preparing dinner tonight. They were having so much fun that I decided to let them enjoy themselves, instead of helping in setting up the table.

    As I listened to their laughter, I thought our Heavenly Father is also allowing me to have fun. I love to blog and He knows it. I get fulfillment when readers leave me pleasant words, sweet messages or even questions regarding a recipe. I feel like I have contributed to this world and that my life is not wasted.

    P/s I am glad to know that you will try my one-pot dishes recipe. It is hard to cook for one person, despite your best intentions, saving money and for health purpose.

    Cheese fondue is something we feel we cannot do well at home as it will ‘stink’ up the whole apartment, and it involves a few kinds of cheese, wine, garlic, special bread and sometimes specific mushrooms. I’m sorry you didn’t have a good experience with it.

    My two eldest sisters are coming to visit us from Tuesday (for 16 days) and my other half and I are planning to ‘wow’ them with German and Swiss cuisine, both prepared at home and ordered in simple mountain restaurants. Hope they’ll enjoy the food, but I’m not sure. ^_^
    I’m also taking them to Italy by train for a week.

    Thanks for coming by. I don’t know if I should tell them that I am a great mother. My children are starting to read Bible and they may show me Proverbs 31:10-31. 🙂 However, my girls are very forgiving. Despite my weaknesses, they still continue to love me. They certainly gave me GRACE (forgiveness + good gifts) when I don’t really deserve it.

    As for a wonderful wife, my husband tells me that sometimes when he is not throwing a temper tantrum. 🙂
